- 150 g crawfish tails peeled
- 120 g zucchini medium sliced
- 15 g unsalted butter
- 10 g all purpose flour
- 120 ml whole milk
- 30 g grated cheddar cheese
- 15 g grated parmesan cheese
- 1 piece garlic clove minced
- 30 g onion small diced
- 1 teaspoon fresh thyme leaves
- 1 pinch salt
- 1 pinch black pepper ground
- 10 g bread crumbs plain

Instructions
- Preheat oven to 190 degrees Celsius (375 Fahrenheit).
- Slice zucchini into thin rounds about 3 mm thick.
- Mince garlic clove and dice small onion.
- In a medium skillet, melt unsalted butter over medium heat.
- Add diced onion and minced garlic to skillet and cook until translucent, about 3 minutes.
- Sprinkle all purpose flour over onion and garlic mixture, stir constantly for 1 minute to form a roux.
- Gradually whisk in whole milk to avoid lumps, cook until sauce thickens, about 4 minutes.
- Remove sauce from heat and stir in grated cheddar cheese, grated parmesan cheese, fresh thyme leaves, salt, and black pepper.
- In a baking dish, layer half of sliced zucchini evenly.
- Spread half of crawfish tails over zucchini layer.
- For half of the cheese sauce over the crawfish and zucchini.
- Repeat layering with remaining zucchini, crawfish, and cheese sauce.
- Sprinkle bread crumbs evenly on top of the casserole.
- Bake in preheated oven for 25 to 30 minutes until top is golden and bubbly.
- Remove from oven and let rest for 5 minutes before serving.
