- 1 piece large egg beaten
- 30 g all purpose flour
- 10 g fresh parsley chopped
- 5 g fresh dill chopped
- 1 piece garlic clove minced
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper ground
- 15 ml olive oil

- Grate the medium zucchini using a fine grater and place it in a clean kitchen towel.
- Squeeze the grated zucchini firmly to remove excess moisture and discard the liquid.
- In a mixing bowl, combine the grated zucchini, beaten large egg, all purpose flour, chopped fresh parsley, chopped fresh dill, and minced garlic clove.
- Add salt and ground black pepper to the mixture and stir well until all ingredients are evenly incorporated.
- Heat olive oil in a nonstick skillet over medium heat until hot but not smoking.
- Spoon about 2 tablespoons of the zucchini batter into the skillet and flatten gently to form small fritters.
- Cook the fritters for 3 to 4 minutes on one side until golden brown and crisp.
- Flip the fritters carefully and cook the other side for another 3 to 4 minutes until golden and cooked through.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve the zucchini fritters warm with a side of sour cream or yogurt if desired.
