- 200 g butternut squash peeled and diced
- 150 g cooked white beans (cannellini)
- 50 g carrot diced
- 50 g yellow onion diced
- 30 g celery stalk diced
- 1 piece garlic clove minced
- 400 ml vegetable broth low sodium
- 1 tablespoon olive oil extra virgin
- 0.5 teaspoon dried thyme
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper ground

- Heat olive oil in a large pot over medium heat.
- Add diced yellow onion and diced celery to the pot and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Add diced carrot and diced butternut squash to the pot and stir well.
- For in vegetable broth and bring the mixture to a boil.
- Reduce heat to low and add dried thyme, salt, and ground black pepper.
- Cover and simmer the soup for 20 minutes until the squash and carrots are tender.
- Add cooked white beans to the pot and stir to combine.
- Use an immersion blender to partially blend the soup, leaving some chunks for texture.
- Simmer the soup for an additional 5 minutes to heat through.
- Taste and adjust seasoning if needed before serving.
