- 30 g unsweetened shredded coconut
- 20 g panko breadcrumbs
- 15 g all purpose flour
- 1 piece large egg beaten
- 10 ml olive oil
- 60 ml pineapple juice unsweetened
- 10 ml honey
- 5 ml rice vinegar
- 2 g fresh ginger grated
- 1 piece garlic clove minced
- 5 g cornstarch
- 1 pinch salt
- 1 pinch black pepper ground

- Preheat oven to 200 degrees Celsius and line a baking sheet with parchment paper.
- In a shallow bowl, mix all purpose flour with salt and black pepper.
- In a second bowl, beat the large egg until smooth.
- In a third bowl, combine panko breadcrumbs and unsweetened shredded coconut.
- Dip each shrimp first into the flour mixture, shaking off excess.
- Then dip shrimp into beaten egg, coating completely.
- Finally, press shrimp into the coconut and panko mixture to coat well.
- Place coated shrimp on the prepared baking sheet in a single layer.
- Lightly drizzle olive oil over the shrimp to help crisping.
- Bake shrimp in the preheated oven for 12 to 15 minutes until golden and crispy.
- While shrimp bakes, prepare the sweet pineapple sauce by combining pineapple juice, honey, rice vinegar, grated fresh ginger, minced garlic, and cornstarch in a small saucepan.
- Whisk sauce ingredients together and bring to a simmer over medium heat, stirring constantly until thickened, about 3 minutes.
- Remove sauce from heat and set aside.
