- 150 g potato peeled and diced
- 100 g leek white and light green parts sliced
- 50 g frozen green peas
- 10 g unsalted butter
- 300 ml vegetable broth low sodium
- 50 ml whole milk
- 1 piece garlic clove minced
- 1 pinch salt
- 1 pinch black pepper ground

- Wash and slice the white and light green parts of the leek into thin rounds.
- Peel and dice the potato into small cubes about 1 cm in size.
- Mince one garlic clove finely.
- In a medium pot, melt the unsalted butter over medium heat.
- Add the sliced leeks and minced garlic to the pot and cook gently for 5 minutes until softened but not browned.
- Add the diced potatoes and frozen green peas to the pot and stir to combine.
- For in the vegetable broth and bring the mixture to a boil.
- Reduce heat to low and simmer uncovered for 20 minutes or until potatoes are tender.
- Using an immersion blender, puree the soup until smooth and creamy.
- Stir in the whole milk and season with salt and ground black pepper to taste.
- Heat the soup gently for 2 more minutes without boiling.
- Serve hot with optional crusty bread or fresh herbs.
