  • 150 g crawfish tails peeled
  • 20 g unsalted butter
  • 40 g yellow onion diced
  • 30 g celery stalk diced
  • 30 g carrot diced
  • 1 piece garlic clove minced
  • 15 g all purpose flour
  • 60 ml dry white wine
  • 15 ml cognac
  • 250 ml fish stock
  • 60 ml heavy cream
  • 10 g tomato paste
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • 1 pinch salt
  • 1 pinch black pepper ground
  • 5 g fresh parsley chopped

  1. Melt unsalted butter in a medium saucepan over medium heat.
  2. Add diced yellow onion, diced celery stalk, diced carrot, and minced garlic clove to the pan.
  3. Cook vegetables until softened and translucent, about 5 minutes, stirring occasionally.
  4. Sprinkle all purpose flour over the vegetables and stir well to coat, cooking for 2 minutes to form a roux.
