- 150 g crawfish tails peeled
- 20 g unsalted butter
- 40 g yellow onion diced
- 30 g celery stalk diced
- 30 g carrot diced
- 1 piece garlic clove minced
- 15 g all purpose flour
- 60 ml dry white wine
- 15 ml cognac
- 250 ml fish stock
- 60 ml heavy cream
- 10 g tomato paste
- 1 teaspoon paprika
- 0.5 teaspoon cayenne pepper
- 1 pinch salt
- 1 pinch black pepper ground
- 5 g fresh parsley chopped

Instructions
- Melt unsalted butter in a medium saucepan over medium heat.
- Add diced yellow onion, diced celery stalk, diced carrot, and minced garlic clove to the pan.
- Cook vegetables until softened and translucent, about 5 minutes, stirring occasionally.
- Sprinkle all purpose flour over the vegetables and stir well to coat, cooking for 2 minutes to form a roux.
- Slowly For in dry white wine while stirring to deglaze the pan and dissolve the roux.
- Add cognac carefully and allow it to cook for 1 minute to reduce slightly.

- Serve the bisque hot, garnished with additional parsley if desired.
