Instructions
- Prepare all ingredients by dicing onion, mincing garlic, chopping green onion, peeling and chopping shrimp, and grating carrot.
- In a mixing bowl, combine ground pork shoulder, chopped shrimp, grated carrot, diced onion, minced garlic, and chopped green onion.
- Add soy sauce, ground black pepper, and a pinch of salt to the meat mixture. Mix thoroughly until all ingredients are evenly incorporated.
- Lay one lumpia wrapper flat on a clean surface. Place half of the filling near one edge of the wrapper.
- Fold the sides of the wrapper over the filling, then roll tightly to form an egg roll shape. Seal the edge with a little water to close.
- Repeat the rolling process with the second lumpia wrapper and remaining filling.
- Heat vegetable oil in a frying pan over medium heat until hot but not smoking.
- Carefully place the lumpia rolls in the hot oil. Fry each side for about 2-3 minutes or until golden brown and crispy.
- Remove the lumpia from the oil and drain on paper towels to remove excess oil.
- Serve the lumpia hot with a dipping sauce of your choice, such as sweet chili or vinegar with garlic.
Tips
- Use fresh shrimp and pork for best flavor and texture.
- Do not overfill the lumpia wrappers to prevent tearing during frying.
- Fry lumpia in medium heat oil to ensure even cooking and crispiness without burning.
