- 150 g monkfish tail fillet skinless
- 15 g unsalted butter
- 10 ml olive oil extra virgin
- 1 piece shallot minced
- 1 piece garlic clove minced
- 10 g tomato paste
- 50 ml dry white wine
- 100 ml fish stock
- 30 ml heavy cream
- 5 g fresh parsley chopped
- 1 pinch salt fine
- 1 pinch black pepper ground

- Cut the monkfish tail fillet into bite-sized pieces about 3 cm each.
- Heat olive oil and half the unsalted butter in a skillet over medium heat.
- Add the monkfish pieces and cook until lightly golden on all sides, about 3 minutes. Remove and set aside.
- In the same skillet, add the minced shallot and garlic clove; cook gently until translucent, about 2 minutes.
- Add the tomato paste and cook for 1 minute, stirring constantly to avoid burning.
- For in the dry white wine and let it reduce by half, about 3 minutes.
- Add the fish stock and simmer for 5 minutes to concentrate the flavors.
- Return the monkfish pieces to the skillet and cook gently for 5 minutes until fish is cooked through.
- Stir in the heavy cream and remaining unsalted butter; cook for 2 minutes until sauce is smooth and slightly thickened.
- Season with fine salt and ground black pepper to taste.
- Sprinkle chopped fresh parsley over the dish before serving.
