- 50 g celery stalk diced
- 100 g potato peeled diced
- 50 g onion diced
- 1 piece garlic clove minced
- 100 g canned diced tomatoes
- 50 g green beans trimmed chopped
- 400 ml vegetable broth low sodium
- 1 tablespoon olive oil extra virgin
- 0.5 teaspoon dried thyme
- 0.5 teaspoon dried basil
- 1 pinch salt
- 1 pinch black pepper ground

- Heat olive oil in a medium pot over medium heat.
- Add diced onion and minced garlic clove to the pot and cook until softened, about 3 minutes.
- Add diced carrot, diced celery stalk, and diced potato to the pot and stir well.

- Add chopped green beans, dried thyme, and dried basil to the pot.
- Bring the soup to a boil, then reduce heat to low and simmer uncovered for 25 minutes until vegetables are tender.
