  • 80 g apple green peeled diced
  • 100 g bread white cubed
  • 2 piece egg large
  • 100 ml whole milk
  • 5 g fresh sage leaves chopped
  • 30 g onion yellow diced
  • 10 g unsalted butter
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Preheat oven to 180 degrees Celsius (350 Fahrenheit).
  2. Heat unsalted butter in a skillet over medium heat until melted.
  3. Add diced yellow onion to the skillet and cook until translucent, about 3 minutes.
  4. Add bison sausage casing removed to the skillet and cook until browned and cooked through, breaking it up with a spoon.
  5. Add diced green apple and chopped fresh sage leaves to the skillet and cook for 2 minutes until slightly softened.
  6. In a bowl, whisk together eggs, whole milk, salt, and ground black pepper until well combined.
  7. Place cubed white bread in a greased baking dish.
  8. For the cooked sausage, apple, sage, and onion mixture evenly over the bread cubes.
  9. For the egg and milk mixture evenly over the bread and sausage mixture, pressing down gently to soak the bread.
  10. Let the strata rest for 10 minutes to absorb the liquid.
  11. Bake in the preheated oven for 35 minutes or until the top is golden brown and the custard is set.
  12. Remove from oven and let cool for 5 minutes before serving.
