- 80 g apple green peeled diced
- 100 g bread white cubed
- 2 piece egg large
- 100 ml whole milk
- 5 g fresh sage leaves chopped
- 30 g onion yellow diced
- 10 g unsalted butter
- 1 pinch salt
- 1 pinch black pepper ground

- Preheat oven to 180 degrees Celsius (350 Fahrenheit).
- Heat unsalted butter in a skillet over medium heat until melted.
- Add diced yellow onion to the skillet and cook until translucent, about 3 minutes.
- Add bison sausage casing removed to the skillet and cook until browned and cooked through, breaking it up with a spoon.
- Add diced green apple and chopped fresh sage leaves to the skillet and cook for 2 minutes until slightly softened.
- In a bowl, whisk together eggs, whole milk, salt, and ground black pepper until well combined.
- Place cubed white bread in a greased baking dish.
- For the cooked sausage, apple, sage, and onion mixture evenly over the bread cubes.
- For the egg and milk mixture evenly over the bread and sausage mixture, pressing down gently to soak the bread.
- Let the strata rest for 10 minutes to absorb the liquid.
- Bake in the preheated oven for 35 minutes or until the top is golden brown and the custard is set.
- Remove from oven and let cool for 5 minutes before serving.
