- 50 g red bell pepper sliced
- 50 g green bell pepper sliced
- 60 g ripe tomato diced
- 40 g onion diced
- 1 piece garlic clove minced
- 15 ml olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon fresh thyme leaves
- 1 piece puff pastry sheet
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Preheat oven to 200 degrees Celsius (about 400 Fahrenheit).
- Roll out the puff pastry sheet on a baking tray lined with parchment paper.
- In a skillet, heat olive oil over medium heat.
- Add diced onion and minced garlic clove; cook until soft and translucent, about 3 minutes.
- Add diced skinless chicken thigh to the skillet; cook until lightly browned, about 5 minutes.
- Add sliced red and green bell peppers to the skillet; cook for 4 minutes until slightly softened.
- Add diced ripe tomato, smoked paprika, fresh thyme leaves, salt, and ground black pepper; stir and cook for 3 minutes to combine flavors.
- Remove skillet from heat and let the filling cool slightly.
- Spread the cooked filling evenly over the puff pastry, leaving a 2 cm border around edges.
- Fold the edges of the pastry slightly over the filling to create a rustic tart shape.
- Bake in the preheated oven for 20 to 25 minutes until the pastry is golden and crisp.
- Remove from oven and let cool for 5 minutes before serving.
