  • 400 ml water
  • 100 g skinless chicken breast sliced
  • 1 piece lemongrass stalk bruised and cut
  • 3 piece kaffir lime leaves torn
  • 3 piece galangal sliced
  • 2 piece shallot sliced
  • 50 g mushrooms sliced
  • 1 piece bird's eye chili sliced
  • 15 ml fish sauce
  • 20 ml lime juice fresh
  • 1 piece tomato quartered
  • 5 g fresh cilantro chopped

Instructions

  1. Bring 400 ml water to a boil in a medium pot.
  2. Add bruised lemongrass stalk, torn kaffir lime leaves, sliced galangal, and sliced shallots to the boiling water.
  3. Simmer the broth for 10 minutes to infuse flavors.
  4. Add sliced skinless chicken breast and sliced mushrooms to the broth.
  5. Cook until chicken is fully cooked, about 5 minutes.
  6. Add quartered tomato and sliced bird's eye chili to the pot.
  7. Season the soup with 15 ml fish sauce and 20 ml fresh lime juice.
  8. Stir well and simmer for another 2 minutes.
  9. Remove from heat and discard lemongrass stalk, kaffir lime leaves, and galangal slices if desired.
  10. Serve hot garnished with chopped fresh cilantro.
