- 150 g skinless chicken thigh diced
- 50 g fresh shiitake mushrooms sliced
- 40 g bamboo shoots sliced
- 15 ml soy sauce low sodium
- 1 piece garlic clove minced
- 5 g ginger fresh minced
- 10 ml vegetable oil
- 10 g green onion chopped
- 50 ml water
- 1 pinch black pepper ground

Instructions
- Prepare all ingredients: dice the skinless chicken thigh, slice the fresh shiitake mushrooms, slice the bamboo shoots, mince the garlic clove and fresh ginger, and chop the green onion.
- Heat the vegetable oil in a medium skillet or wok over medium heat until hot but not smoking.
- Add the minced garlic and ginger to the skillet and stir fry for about 30 seconds until fragrant, taking care not to burn them.
- Add the diced chicken thigh to the skillet and cook for 5 to 7 minutes, stirring occasionally, until the chicken is no longer pink and starts to brown.
- Add the sliced shiitake mushrooms and bamboo shoots to the skillet and stir to combine with the chicken.
- For in the low sodium soy sauce and water, then stir everything together to coat the ingredients evenly.
- Cover the skillet and let the mixture simmer for 5 minutes to allow the flavors to meld and the chicken to cook through.
- Remove the lid and cook uncovered for another 2 minutes to reduce the sauce slightly.
- Season with a pinch of ground black pepper and stir in the chopped green onion just before serving.
- Serve hot with steamed rice or your preferred side dish.
