  • 150 g skinless chicken thigh diced
  • 50 g fresh shiitake mushrooms sliced
  • 40 g bamboo shoots sliced
  • 15 ml soy sauce low sodium
  • 1 piece garlic clove minced
  • 5 g ginger fresh minced
  • 10 ml vegetable oil
  • 10 g green onion chopped
  • 50 ml water
  • 1 pinch black pepper ground

Instructions

  1. Prepare all ingredients: dice the skinless chicken thigh, slice the fresh shiitake mushrooms, slice the bamboo shoots, mince the garlic clove and fresh ginger, and chop the green onion.
  2. Heat the vegetable oil in a medium skillet or wok over medium heat until hot but not smoking.
  3. Add the minced garlic and ginger to the skillet and stir fry for about 30 seconds until fragrant, taking care not to burn them.
  4. Add the diced chicken thigh to the skillet and cook for 5 to 7 minutes, stirring occasionally, until the chicken is no longer pink and starts to brown.
  5. Add the sliced shiitake mushrooms and bamboo shoots to the skillet and stir to combine with the chicken.
  6. For in the low sodium soy sauce and water, then stir everything together to coat the ingredients evenly.
  7. Cover the skillet and let the mixture simmer for 5 minutes to allow the flavors to meld and the chicken to cook through.
  8. Remove the lid and cook uncovered for another 2 minutes to reduce the sauce slightly.
  9. Season with a pinch of ground black pepper and stir in the chopped green onion just before serving.
  10. Serve hot with steamed rice or your preferred side dish.
