- 150 g venison steak 150g
- 50 ml port wine
- 15 g unsalted butter
- 1 piece shallot minced
- 1 piece fresh thyme sprig
- 30 g cream cheese softened
- 5 g fresh parsley chopped
- 5 g fresh chives chopped
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Season the venison steak with salt and ground black pepper on both sides.
- Heat 10g unsalted butter in a skillet over medium-high heat until melted and hot.
- Add the venison steak to the skillet and cook for 3 minutes on each side for medium rare, adjusting time for preferred doneness.
- Remove the steak from the skillet and cover loosely with foil to rest.
- In the same skillet, add the minced shallot and cook for 1 minute until softened.
- For in the port wine and add the fresh thyme sprig, simmering until the liquid reduces by half, about 3-4 minutes.
- Remove the thyme sprig and whisk in the remaining 5g unsalted butter to finish the sauce, then remove from heat.
- In a small bowl, combine the softened cream cheese with chopped parsley and chives, mixing well.
- Serve the venison steak topped with a dollop of the creamy herb cheese and drizzle the port wine sauce over the steak or on the side.
