- 1 teaspoon baking powder
- 1 teaspoon lemon zest grated

- Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit).
- Grease a small cake pan with olive oil and lightly dust with flour.
- In a mixing bowl, whisk together the all purpose flour, baking powder, and pinch of salt.
- In another bowl, beat the large egg with granulated sugar until pale and fluffy.
- Add extra virgin olive oil, whole milk, lemon zest grated, and vanilla extract to the egg mixture and mix well.
- Gradually fold the dry ingredients into the wet ingredients until just combined, do not overmix.
- For the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for 10 minutes.
- Transfer the cake to a wire rack to cool completely before serving.
