- 150 g potato peeled and diced
- 80 g onion medium diced
- 100 g tomato ripe diced
- 15 ml olive oil extra virgin
- 1 piece garlic clove minced
- 100 ml water
- 1 pinch salt
- 1 pinch black pepper ground
- 0.5 teaspoon dried oregano

Instructions
- Peel and dice the potato into small cubes about 1 cm each.
- Peel and dice the medium onion into small pieces.
- Wash and dice the ripe tomato into small chunks.
- Heat extra virgin olive oil in a medium saucepan over medium heat.
- Add the diced onion and minced garlic clove to the oil and cook until softened, about 3 minutes.
- Add the diced potatoes to the saucepan and stir to coat with oil and onions.
- Add the diced tomatoes, water, salt, ground black pepper, and dried oregano to the pan.
- Bring the mixture to a gentle simmer, cover the pan with a lid, and cook for 25 minutes or until potatoes are tender.
- Check occasionally and add a little more water if the mixture looks dry to prevent sticking.
- Once vegetables are tender and sauce is thickened, remove from heat and let rest covered for 5 minutes before serving.
