  • 150 g potato peeled and diced
  • 80 g onion medium diced
  • 100 g tomato ripe diced
  • 15 ml olive oil extra virgin
  • 1 piece garlic clove minced
  • 100 ml water
  • 1 pinch salt
  • 1 pinch black pepper ground
  • 0.5 teaspoon dried oregano

  1. Peel and dice the potato into small cubes about 1 cm each.
  2. Peel and dice the medium onion into small pieces.
  3. Wash and dice the ripe tomato into small chunks.
  4. Heat extra virgin olive oil in a medium saucepan over medium heat.
  5. Add the diced onion and minced garlic clove to the oil and cook until softened, about 3 minutes.
  6. Add the diced potatoes to the saucepan and stir to coat with oil and onions.
  7. Add the diced tomatoes, water, salt, ground black pepper, and dried oregano to the pan.
  8. Bring the mixture to a gentle simmer, cover the pan with a lid, and cook for 25 minutes or until potatoes are tender.
  9. Check occasionally and add a little more water if the mixture looks dry to prevent sticking.
  10. Once vegetables are tender and sauce is thickened, remove from heat and let rest covered for 5 minutes before serving.
