  • 10 g unsalted butter
  • 5 ml lemon juice fresh
  • 1 pinch salt fine
  • 1 pinch black pepper ground
  • 3 piece mini tartlet shells ready made
  • 2 g fresh chives chopped

  1. Bring a pot of salted water to a boil.
  2. Add the fresh green asparagus spears and cook for 5 minutes until tender.
  3. Drain the asparagus and immediately plunge into ice water to stop cooking and preserve color.
  4. Drain the asparagus again and chop into small pieces.
  5. In a blender, combine chopped asparagus, cream cheese, unsalted butter, lemon juice, salt, and black pepper.
  6. Blend until smooth and creamy to form the asparagus mousse.
  7. Preheat the oven to 180 degrees Celsius (350 Fahrenheit).
  8. Place the mini tartlet shells on a baking tray and warm them in the oven for 5 minutes.
  9. Remove tartlet shells from oven and let cool slightly.
  10. Fill each tartlet shell with a spoonful of the creamy asparagus mousse.
  11. Top the mousse with shredded surimi sticks evenly distributed.
  12. Garnish each tartlet with chopped fresh chives.
  13. Serve immediately or chill for 15 minutes before serving for a cooler mousse.
