- 100 g zucchini sliced
- 100 g yellow squash sliced
- 50 g red bell pepper diced
- 80 g eggplant diced
- 40 g onion diced
- 1 piece garlic clove minced
- 15 ml olive oil
- 30 g grated cheddar cheese
- 50 ml whole milk
- 1 teaspoon fresh thyme leaves
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Preheat oven to 190 degrees Celsius (375 Fahrenheit).
- Wash and slice zucchini and yellow squash into thin rounds.
- Dice red bell pepper, eggplant, and onion into small pieces.
- Peel and mince one garlic clove.
- Heat olive oil in a skillet over medium heat.
- Add diced onion and minced garlic to skillet and cook until translucent, about 3 minutes.
- Add diced eggplant and red bell pepper to skillet and cook for 5 minutes until slightly softened.
- Add sliced zucchini and yellow squash to skillet and cook for another 3 minutes.
- Season vegetables with salt, ground black pepper, and fresh thyme leaves; stir well.
- Transfer cooked vegetables to a small baking dish evenly.
- For whole milk over the vegetables.
- Sprinkle grated cheddar cheese evenly on top.
- Bake in preheated oven for 25 minutes until cheese is golden and bubbling.
- Remove from oven and let rest for 5 minutes before serving.
