  • 100 g zucchini sliced
  • 100 g yellow squash sliced
  • 50 g red bell pepper diced
  • 80 g eggplant diced
  • 40 g onion diced
  • 1 piece garlic clove minced
  • 15 ml olive oil
  • 30 g grated cheddar cheese
  • 50 ml whole milk
  • 1 teaspoon fresh thyme leaves
  • 1 pinch salt
  • 1 pinch black pepper ground

Instructions

  1. Preheat oven to 190 degrees Celsius (375 Fahrenheit).
  2. Wash and slice zucchini and yellow squash into thin rounds.
  3. Dice red bell pepper, eggplant, and onion into small pieces.
  4. Peel and mince one garlic clove.
  5. Heat olive oil in a skillet over medium heat.
  6. Add diced onion and minced garlic to skillet and cook until translucent, about 3 minutes.
  7. Add diced eggplant and red bell pepper to skillet and cook for 5 minutes until slightly softened.
  8. Add sliced zucchini and yellow squash to skillet and cook for another 3 minutes.
  9. Season vegetables with salt, ground black pepper, and fresh thyme leaves; stir well.
  10. Transfer cooked vegetables to a small baking dish evenly.
  11. For whole milk over the vegetables.
  12. Sprinkle grated cheddar cheese evenly on top.
  13. Bake in preheated oven for 25 minutes until cheese is golden and bubbling.
  14. Remove from oven and let rest for 5 minutes before serving.
