  • 1 piece small pumpkin whole
  • 100 g Italian sausage casing removed
  • 50 g red bell pepper diced
  • 50 g yellow onion diced
  • 50 g zucchini diced
  • 50 g carrot diced
  • 1 piece garlic clove minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley chopped
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Preheat oven to 190 Celsius (375 Fahrenheit).
  2. Cut top off small pumpkin and scoop out seeds and fibers carefully to create a bowl.
  3. Brush inside and outside of pumpkin with half tablespoon olive oil and sprinkle with pinch of salt.
  4. Place pumpkin and its top on baking sheet and roast in oven for 25 minutes until tender but firm.
  5. Heat remaining half tablespoon olive oil in skillet over medium heat.
  6. Add diced yellow onion and minced garlic clove; cook until translucent, about 3 minutes.
  7. Add Italian sausage casing removed to skillet and cook, breaking up meat, until browned and cooked through, about 5 minutes.
  8. Add diced red bell pepper, zucchini, and carrot to skillet; cook until vegetables are tender, about 7 minutes.
  9. Season mixture with pinch of salt and black pepper ground; stir in chopped fresh parsley and remove from heat.
  10. Fill roasted pumpkin bowl with sausage and vegetable mixture.
  11. Return stuffed pumpkin to oven and bake for additional 10 minutes to meld flavors.
  12. Remove from oven and let rest 5 minutes before serving.
