- 100 g kale leaves chopped
- 70 g rice noodles dry
- 1 piece garlic clove minced
- 5 g fresh ginger minced
- 15 ml soy sauce low sodium
- 10 ml sesame oil
- 10 ml vegetable oil
- 1 piece spring onion sliced
- 0.5 piece red chili sliced
- 5 g toasted sesame seeds

Instructions
- Soak rice noodles in warm water for 10 minutes until soft, then drain and set aside.
- Heat vegetable oil in a wok or large skillet over medium-high heat.
- Add minced garlic and minced fresh ginger to the hot oil and stir-fry for 30 seconds until fragrant.
- Add chopped kale leaves and stir-fry for 3 minutes until wilted but still bright green.
- Add softened rice noodles to the wok and toss to combine with kale and aromatics.
- For in low sodium soy sauce and sesame oil, stirring well to coat noodles and kale evenly.
- Add sliced spring onion and sliced red chili, stir-fry for another 1 minute.
- Remove from heat and sprinkle toasted sesame seeds on top before serving.
