  • 100 g kale leaves chopped
  • 70 g rice noodles dry
  • 1 piece garlic clove minced
  • 5 g fresh ginger minced
  • 15 ml soy sauce low sodium
  • 10 ml sesame oil
  • 10 ml vegetable oil
  • 1 piece spring onion sliced
  • 0.5 piece red chili sliced
  • 5 g toasted sesame seeds

Instructions

  1. Soak rice noodles in warm water for 10 minutes until soft, then drain and set aside.
  2. Heat vegetable oil in a wok or large skillet over medium-high heat.
  3. Add minced garlic and minced fresh ginger to the hot oil and stir-fry for 30 seconds until fragrant.
  4. Add chopped kale leaves and stir-fry for 3 minutes until wilted but still bright green.
  5. Add softened rice noodles to the wok and toss to combine with kale and aromatics.
  6. For in low sodium soy sauce and sesame oil, stirring well to coat noodles and kale evenly.
  7. Add sliced spring onion and sliced red chili, stir-fry for another 1 minute.
  8. Remove from heat and sprinkle toasted sesame seeds on top before serving.
