- 150 g ground beef lean
- 50 g onion diced
- 30 g red bell pepper diced
- 1 piece garlic clove minced
- 1 tablespoon olive oil
- 1 tablespoon tomato paste
- 0.5 teaspoon ground cumin
- 0.5 teaspoon paprika
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper ground
- 30 g frozen peas
- 100 g all purpose flour
- 50 g unsalted butter chilled
- 30 ml cold water
- 1 piece egg beaten

Instructions
- In a skillet, heat olive oil over medium heat.
- Add diced onion and red bell pepper; cook until soft, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Add ground beef lean; cook until browned, breaking it apart with a spoon.
- Stir in tomato paste, ground cumin, paprika, salt, and black pepper; cook for 2 minutes.
- Add frozen peas and cook for another 2 minutes; remove from heat and let cool.
- To make dough, combine all purpose flour and chilled unsalted butter in a bowl.
- Use fingers or a pastry cutter to blend butter into flour until mixture resembles coarse crumbs.
- Add cold water gradually and mix until dough forms a ball; do not overwork.
- Wrap dough in plastic and refrigerate for 30 minutes.
- Preheat oven to 200C (400F).
- Roll out dough on a floured surface to about 3mm thickness.
- Cut dough into circles about 12cm in diameter.
- Place a spoonful of meat filling in the center of each dough circle.
- Fold dough over filling to form a half-moon shape; press edges to seal.
- Brush each empanada with beaten egg for a golden finish.
- Place empanadas on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes until golden brown and cooked through.

- Do not overfill empanadas to avoid breaking during baking.
- Let filling cool before assembling to prevent soggy dough.
