- 80 g crozets pasta
- 15 g unsalted butter
- 40 g onion diced
- 1 piece garlic clove minced
- 50 ml dry white wine
- 200 ml vegetable broth hot
- 40 g rich alpine cheese grated
- 30 ml heavy cream
- 5 g fresh parsley chopped
- 1 pinch salt
- 1 pinch black pepper ground

- Bring vegetable broth to a simmer in a small pot and keep hot on low heat.
- Melt unsalted butter in a medium saucepan over medium heat.
- Add diced onion and minced garlic clove to the butter and cook gently until translucent, about 3 minutes.
- Add crozets pasta to the saucepan and stir to coat with butter and onion mixture, cook for 2 minutes.
- For in dry white wine and stir until mostly absorbed by the pasta.
- Add a ladle of hot vegetable broth to the pasta and stir continuously until liquid is mostly absorbed.
- Continue adding broth one ladle at a time, stirring frequently, until crozets are tender and creamy, about 15 minutes.
- Stir in grated rich alpine cheese and heavy cream until melted and well combined.
- Season with salt and ground black pepper to taste.
- Remove from heat and stir in chopped fresh parsley.
- Serve immediately while hot and creamy.
