- 75 g long grain white rice uncooked
- 50 g mixed vegetables frozen (carrots peas corn)
- 20 g golden raisins
- 30 g onion yellow diced
- 1 piece garlic clove minced
- 150 ml vegetable broth low sodium
- 1 tablespoon olive oil extra virgin
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Rinse the long grain white rice under cold water until water runs clear, then drain well.
- Heat the extra virgin olive oil in a medium saucepan over medium heat.
- Add the diced yellow onion and minced garlic clove to the saucepan and cook, stirring occasionally, until the onion is translucent and soft, about 3 minutes.
- Add the rinsed rice to the saucepan and stir to coat the rice with the oil and cook for 2 minutes to lightly toast the rice.
- For in the vegetable broth and bring to a boil over high heat.
- Reduce the heat to low, cover the saucepan with a lid, and simmer for 10 minutes.
- After 10 minutes, add the frozen mixed vegetables and golden raisins to the rice, stir gently, cover again, and cook for another 5 minutes until the rice is tender and liquid absorbed.
- Remove the saucepan from heat and let the rice pilaf rest covered for 5 minutes.
- Fluff the rice pilaf gently with a fork, season with salt and ground black pepper to taste, and serve warm.

- Rinse rice well to avoid sticky texture.
