  • 50 g cucumber peeled and diced
  • 30 g red bell pepper chopped
  • 1 piece garlic clove minced
  • 10 ml extra virgin olive oil
  • 10 ml fresh lemon juice
  • 100 ml cold water
  • 5 g fresh basil leaves chopped
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Wash and chop the ripe red tomatoes into small pieces.
  2. Peel and dice the cucumber into small cubes.
  3. Chop the red bell pepper into small pieces.
  4. Peel and mince the garlic clove finely.
  5. Place the chopped tomatoes, cucumber, red bell pepper, and minced garlic into a blender.
  6. Add extra virgin olive oil, fresh lemon juice, and cold water to the blender.
  7. Add a pinch of salt and ground black pepper to the blender.
  8. Blend all ingredients on high speed until smooth and creamy.
  9. Taste the soup and adjust seasoning with more salt or lemon juice if needed.
  10. Chill the soup in the refrigerator for at least 1 hour before serving.
  11. Serve the chilled tomato soup garnished with chopped fresh basil leaves.
