  • 70 g couscous uncooked
  • 100 ml chicken broth low sodium
  • 50 g carrot peeled diced
  • 50 g zucchini diced
  • 30 g onion diced
  • 1 piece garlic clove minced
  • 1 tablespoon olive oil extra virgin
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper ground
  • 5 g fresh parsley chopped

  1. Heat olive oil in a medium skillet over medium heat.
  2. Add diced onion and minced garlic clove to the skillet and cook until softened, about 3 minutes.
  3. Add diced skinless chicken breast to the skillet and cook until browned on all sides, about 5 minutes.
  4. Stir in ground cumin and ground coriander, cooking for 1 minute to release flavors.
  5. Add diced carrot and zucchini to the skillet and cook for 3 minutes, stirring occasionally.
  6. For in low sodium chicken broth and bring to a simmer.
  7. Remove skillet from heat and stir in uncooked couscous, cover and let sit for 5 minutes to absorb liquid.
  8. Fluff couscous with a fork and season with salt and black pepper to taste.
  9. Sprinkle chopped fresh parsley over the dish before serving.
