- 70 g couscous uncooked
- 100 ml chicken broth low sodium
- 50 g carrot peeled diced
- 50 g zucchini diced
- 30 g onion diced
- 1 piece garlic clove minced
- 1 tablespoon olive oil extra virgin
- 0.5 teaspoon ground cumin
- 0.5 teaspoon ground coriander
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper ground
- 5 g fresh parsley chopped

- Heat olive oil in a medium skillet over medium heat.
- Add diced onion and minced garlic clove to the skillet and cook until softened, about 3 minutes.
- Add diced skinless chicken breast to the skillet and cook until browned on all sides, about 5 minutes.
- Stir in ground cumin and ground coriander, cooking for 1 minute to release flavors.
- Add diced carrot and zucchini to the skillet and cook for 3 minutes, stirring occasionally.
- For in low sodium chicken broth and bring to a simmer.
- Remove skillet from heat and stir in uncooked couscous, cover and let sit for 5 minutes to absorb liquid.
- Fluff couscous with a fork and season with salt and black pepper to taste.
- Sprinkle chopped fresh parsley over the dish before serving.
