- 300 g bone-in pork shoulder roast
- 2 piece garlic clove minced
- 1 tablespoon fresh rosemary leaves chopped
- 1 tablespoon olive oil extra virgin
- 1 teaspoon sea salt
- 0.5 teaspoon black pepper ground
- 1 piece onion medium diced
- 1 piece carrot medium diced
- 1 piece celery stalk diced
- 150 ml chicken broth low sodium

Instructions
- Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit).
- Pat the pork shoulder roast dry with paper towels.
- Mix minced garlic, chopped rosemary, sea salt, and ground black pepper in a small bowl.
- Rub the garlic and herb mixture all over the pork shoulder roast evenly.
- Heat extra virgin olive oil in a roasting pan over medium heat on the stove.
- Sear the pork roast on all sides until golden brown, about 3 minutes per side.
- Remove the roast and set aside.
- Add diced onion, carrot, and celery to the roasting pan and cook until softened, about 5 minutes.
- Place the pork roast on top of the vegetables in the roasting pan.
- For chicken broth into the pan around the roast.
- Cover the roasting pan with a lid or foil and place in the preheated oven.
- Roast for 1 hour and 30 minutes, basting occasionally with pan juices.
- Remove the cover and roast for an additional 15 minutes to brown the top.
- Check the internal temperature of the pork; it should reach 70 degrees Celsius (160 degrees Fahrenheit).
- Remove the roast from the oven and let rest for 15 minutes before slicing.
