  • 100 g ready-made shortcrust pastry sheet
  • 50 g zucchini sliced
  • 40 g red bell pepper diced
  • 40 g yellow bell pepper diced
  • 50 g eggplant diced
  • 50 g cherry tomatoes halved
  • 30 g onion diced
  • 1 piece garlic clove minced
  • 15 ml olive oil extra virgin
  • 5 g fresh basil leaves chopped
  • 40 g goat cheese crumbled
  • 1 pinch salt
  • 1 pinch black pepper ground

Instructions

  1. Preheat oven to 200 degrees Celsius (about 400 degrees Fahrenheit).
  2. Roll out the ready-made shortcrust pastry sheet and place it into a tart pan, pressing gently to fit the shape.
  3. Prick the pastry base with a fork to prevent bubbling during baking.
  4. Bake the pastry base blind for 10 minutes, then remove from oven.
  5. Heat olive oil in a frying pan over medium heat.
  6. Add diced onion and minced garlic clove to the pan and cook until softened, about 3 minutes.
  7. Add diced zucchini, eggplant, red and yellow bell peppers to the pan and cook for 5 minutes until vegetables are tender.
  8. Add halved cherry tomatoes and cook for another 2 minutes.
  9. Season the vegetable mixture with salt and ground black pepper, then remove from heat.
  10. Spread the cooked vegetable mixture evenly over the pre-baked pastry base.
  11. Sprinkle crumbled goat cheese over the vegetables.
  12. Bake the tart in the oven for 15 minutes until the cheese is slightly golden and the pastry is fully cooked.
  13. Remove tart from oven and sprinkle chopped fresh basil leaves on top before serving.
