- 150 g white fish fillet skinless
- 50 g langoustine tail peeled
- 1 piece egg white
- 30 ml heavy cream
- 10 g unsalted butter
- 1 piece shallot minced
- 1 piece garlic clove minced
- 30 ml dry white wine
- 50 ml fish stock
- 5 ml lemon juice fresh
- 5 g flat leaf parsley chopped
- 1 pinch salt
- 1 pinch black pepper ground

- Cut the white fish fillet into small pieces and place in a food processor.
- Add the egg white and blend until you obtain a smooth fish paste.
- Form small dumplings by shaping the fish paste into oval shapes with wet hands.
- Bring a pot of salted water to a gentle simmer.
- Cook the fish dumplings in the simmering water for about 4 minutes until they float to the surface.
- Remove the dumplings with a slotted spoon and set aside.
- In a small saucepan, melt the unsalted butter over medium heat.
- Add the minced shallot and garlic clove and cook gently until translucent, about 2 minutes.
- For in the dry white wine and let it reduce by half.
- Add the fish stock and simmer for 5 minutes to concentrate the flavors.
- Add the peeled langoustine tails and cook for 3 minutes until tender.
- Remove the langoustines and chop finely, then return to the sauce.
- Stir in the heavy cream and lemon juice, and heat gently without boiling.
- Season the sauce with salt and ground black pepper to taste.
- Add the chopped flat leaf parsley to the sauce and stir well.
- Serve the fish dumplings topped with the warm langoustine sauce.
