- 50 g onion diced
- 30 g red bell pepper diced
- 1 tablespoon cajun seasoning
- 0.5 teaspoon smoked paprika
- 0.25 teaspoon cayenne pepper
- 60 ml chicken broth low sodium
- 10 ml lemon juice fresh
- 5 g fresh parsley chopped
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper ground

- Pat the skinless chicken breast dry with paper towels.
- Mix cajun seasoning, smoked paprika, cayenne pepper, salt, and black pepper in a small bowl.
- Rub the spice mix evenly over the chicken breast on all sides.

- Add the chicken breast to the skillet and cook for 5 minutes without moving it.
- Flip the chicken breast and add diced onion, red bell pepper, and minced garlic clove around it.
- Cook for another 5 minutes until chicken is golden and vegetables soften.
- For chicken broth and fresh lemon juice into the skillet around the chicken.
- Cover the skillet and reduce heat to low; simmer for 8 minutes until chicken is cooked through.
- Remove chicken from skillet and let rest for 3 minutes before slicing.
- Sprinkle chopped fresh parsley over the chicken and vegetables before serving.
