- 100 g leek white and light green parts sliced
- 50 g bacon strips diced
- 60 g Reblochon cheese sliced
- 50 g all purpose flour
- 30 g unsalted butter cold diced
- 30 ml cold water
- 1 piece egg beaten
- 1 pinch salt
- 1 pinch black pepper ground
- 1 tablespoon olive oil

Instructions
- In a bowl, combine all purpose flour and cold diced unsalted butter. Rub with fingertips until mixture resembles coarse crumbs.
- Add cold water and half of the beaten egg to the flour mixture. Mix gently until dough forms a ball. Wrap in plastic and chill for 30 minutes.
- Preheat oven to 180 Celsius (350 Fahrenheit).
- Heat olive oil in a pan over medium heat. Add sliced leeks and diced bacon strips. Cook until leeks are soft and bacon is lightly browned, about 8 minutes.
- Season leek and bacon mixture with salt and ground black pepper. Remove from heat and let cool.
- Roll out chilled dough on a floured surface to fit a small pie dish.
- Place dough into pie dish and trim edges. Prick base with a fork.
- Spread cooled leek and bacon mixture evenly over the dough base.
- Arrange sliced Reblochon cheese over the leek and bacon layer.
- Brush edges of dough with remaining beaten egg.
- Bake pie in preheated oven for 25 to 30 minutes until crust is golden and cheese is melted and bubbly.
- Remove pie from oven and let rest for 5 minutes before serving.
