Instructions

  1. Preheat the oven to 190 degrees Celsius (375 Fahrenheit).
  2. Butter a 12-ounce souffle dish and sprinkle granulated sugar inside, coating evenly; discard excess sugar.
  3. In a small saucepan, melt unsalted butter over medium heat.
  4. Add all-purpose flour to the melted butter and whisk continuously for 1 minute to form a roux.
  5. Gradually For whole milk into the roux while whisking to avoid lumps; cook until thickened, about 2-3 minutes.
  6. Remove the saucepan from heat and stir in granulated sugar and large egg yolk until smooth.
  7. Add kirsch (cherry brandy) and mix well; set aside to cool slightly.
  8. In a clean bowl, beat the large egg white with a pinch of salt until stiff peaks form.
  9. Gently fold one-third of the beaten egg whites into the cooled mixture to lighten it.
  10. Carefully fold in the remaining egg whites until just combined, preserving airiness.
  11. For the batter into the prepared souffle dish and smooth the top with a spatula.
  12. Place the souffle dish on a baking sheet and bake in the preheated oven for 18-22 minutes until risen and golden.
  13. Serve immediately to enjoy the souffle's light texture and kirsch aroma.

Tips

  • Use room temperature eggs for better volume when whipping egg whites.
  • Do not open the oven door during baking to prevent the souffle from collapsing.
  • Serve immediately as souffle will deflate quickly after baking.
