- 300 g oxtail piece trimmed
- 30 g peanut butter unsweetened
- 2 piece garlic clove minced
- 0.5 piece onion medium diced
- 100 g eggplant small sliced
- 50 g string beans trimmed cut
- 50 g banana blossom sliced
- 1 tablespoon annatto seeds
- 500 ml water
- 1 tablespoon fish sauce
- 1 tablespoon vegetable oil
- 1 pinch salt

Instructions
- Place oxtail pieces in a large pot and cover with water.
- Bring to a boil over high heat, then reduce to medium and simmer for 2 hours until meat is tender.
- Remove oxtail from broth and set aside; reserve broth for later.
- In a small pan, heat vegetable oil over medium heat.
- Add annatto seeds and cook until oil turns red-orange, then strain seeds and discard them, keeping the colored oil.
- In a large pot, heat annatto oil and saute minced garlic and diced onion until fragrant and translucent.
- Add peanut butter and stir to combine with garlic and onion.
- Slowly add reserved oxtail broth while stirring to form a smooth peanut sauce.
- Return oxtail pieces to the pot and simmer in peanut sauce for 20 minutes.
- Add sliced eggplant, string beans, and banana blossom to the pot.
- Cook for another 10 minutes until vegetables are tender but not mushy.
- Season with fish sauce and salt to taste.
- Serve hot with steamed white rice.
