  • 100 g carrot peeled and diced
  • 50 g celery stalk diced
  • 70 g yellow onion diced
  • 1 piece garlic clove minced
  • 150 g potato peeled and diced
  • 100 g butternut squash peeled and diced
  • 100 g canned diced tomatoes
  • 400 ml vegetable broth low sodium
  • 1 tablespoon olive oil extra virgin
  • 1 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary crushed
  • 1 pinch salt
  • 1 pinch black pepper ground

Instructions

  1. Peel and dice the carrot into small pieces.
  2. Dice the celery stalk into small pieces.
  3. Peel and dice the yellow onion.
  4. Peel and dice the potato into small cubes.
  5. Peel and dice the butternut squash into small cubes.
  6. Mince the garlic clove finely.
  7. Heat the extra virgin olive oil in a large pot over medium heat.
  8. Add the diced onion and minced garlic to the pot and cook until softened, about 5 minutes.
  9. Add the diced carrot, celery, potato, and butternut squash to the pot and stir well.
  10. For in the vegetable broth and canned diced tomatoes with their juice.
  11. Add the dried thyme and crushed dried rosemary to the pot and stir to combine.
  12. Season with a pinch of salt and ground black pepper.
  13. Bring the soup to a boil, then reduce heat to low and simmer uncovered for 30 minutes or until vegetables are tender.
  14. Taste and adjust seasoning if needed before serving.
