- 200 g lamb shoulder diced
- 150 g cooked white beans drained
- 100 g carrot peeled diced
- 50 g celery stalk diced
- 80 g yellow onion diced
- 2 piece garlic clove minced
- 15 g tomato paste
- 250 ml beef broth low sodium
- 1 tablespoon olive oil extra virgin
- 1 piece fresh thyme sprig
- 1 piece bay leaf dried
- 1 teaspoon salt
- 0.5 teaspoon black pepper ground

Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced lamb shoulder and brown on all sides for 5 minutes.
- Remove lamb and set aside.
- Add diced yellow onion, carrot, and celery to the pot and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in tomato paste and cook for 2 minutes.
- Return lamb to the pot and add beef broth, cooked white beans, fresh thyme sprig, and bay leaf.
- Bring to a boil, then reduce heat to low and cover.
- Simmer gently for 1 hour until lamb is tender.
- Remove thyme sprig and bay leaf.
- Season stew with salt and ground black pepper to taste.
- Serve hot with crusty bread or steamed rice.
