  1. Preheat the oven to 200 degrees Celsius (about 400 degrees Fahrenheit).
  2. Roll out the puff pastry sheet on a clean surface to fit your tart pan or baking tray.
  3. Place the puff pastry on the baking tray lined with baking paper.
  4. Score a border about 2 cm from the edge of the pastry without cutting through.
  5. Mix the cream cheese with lemon juice, salt, and black pepper in a small bowl until smooth.
  6. Spread the cream cheese mixture evenly inside the scored border on the puff pastry.
  7. Distribute the chopped fresh sorrel leaves evenly over the cream cheese layer.
