- 80 g carrot peeled diced
- 50 g celery stalk diced
- 100 g potato peeled diced
- 60 g yellow onion diced
- 1 piece garlic clove minced
- 60 g green beans trimmed chopped
- 100 g diced tomatoes canned
- 250 ml low sodium chicken broth
- 1 tablespoon olive oil extra virgin
- 0.5 teaspoon dried thyme
- 0.5 teaspoon dried rosemary crushed
- 0.25 teaspoon black pepper ground
- 0.25 teaspoon salt kosher

- Heat olive oil in a large pot over medium heat.
- Add diced yellow onion and minced garlic clove to the pot and cook until softened, about 3 minutes.
- Add diced smoked ham to the pot and cook for 5 minutes, stirring occasionally.
- Add diced carrot, celery stalk, and potato to the pot and stir well.
- For in low sodium chicken broth and canned diced tomatoes with their juice.
- Add dried thyme, dried rosemary, black pepper, and kosher salt to the pot and stir to combine.
- Bring the stew to a boil, then reduce heat to low and cover the pot.
- Simmer the stew gently for 25 minutes, stirring occasionally.
- Add chopped green beans to the pot and cook uncovered for an additional 10 minutes until all vegetables are tender.
- Taste and adjust seasoning if needed, then remove from heat and let rest for 5 minutes before serving.
