  • 200 g veal shoulder diced
  • 50 g red bell pepper sliced
  • 50 g green bell pepper sliced
  • 100 g ripe tomato peeled chopped
  • 50 g onion diced
  • 1 piece garlic clove minced
  • 15 ml extra virgin olive oil
  • 50 ml dry white wine
  • 100 ml beef broth low sodium
  • 1 teaspoon sweet paprika powder
  • 0.5 teaspoon dried thyme
  • 1 piece bay leaf
  • 1 pinch salt
  • 1 pinch black pepper ground

Instructions

  1. Heat olive oil in a heavy pan over medium heat.
  2. Add diced veal shoulder and brown on all sides for about 5 minutes.
  3. Remove veal and set aside.
  4. In the same pan, add diced onion and minced garlic clove; cook until softened, about 3 minutes.
  5. Add sliced red and green bell peppers; cook for 5 minutes until slightly tender.
  6. Stir in peeled chopped ripe tomatoes and cook for 2 minutes.
  7. Return browned veal to the pan.
  8. Add dry white wine and simmer for 3 minutes to reduce slightly.
  9. For in low sodium beef broth.
  10. Add sweet paprika powder, dried thyme, bay leaf, salt, and ground black pepper.
  11. Bring to a boil, then reduce heat to low and cover.
  12. Simmer gently for 1 hour or until veal is tender, stirring occasionally.
  13. Remove bay leaf before serving.
