  • 50 g red bell pepper chopped
  • 40 g onion diced
  • 1 piece garlic clove minced
  • 5 g fresh ginger minced
  • 100 g canned diced tomatoes
  • 100 ml coconut milk
  • 1 tablespoon vegetable oil
  • 1 tablespoon curry powder
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper ground
  • 5 g fresh cilantro chopped

  1. Heat vegetable oil in a medium pan over medium heat.
  2. Add diced onion and cook until translucent, about 3 minutes.
  3. Add minced garlic and ginger; cook for 1 minute until fragrant.
  4. Stir in curry powder and ground cumin; cook for 30 seconds to release aroma.
  5. Add diced skinless chicken breast; cook until lightly browned, about 5 minutes.
  6. Add sliced carrot and chopped red bell pepper; stir to combine.
  7. For in canned diced tomatoes and coconut milk; stir well.
  8. Season with salt and ground black pepper; bring to a simmer.
  9. Cover and cook on low heat for 15 minutes until chicken is cooked through and vegetables are tender.
  10. Remove lid and simmer for 5 minutes to thicken sauce if needed.
  11. Garnish with chopped fresh cilantro before serving.
