- 50 g carrot peeled and sliced
- 50 g red bell pepper chopped
- 40 g onion diced
- 1 piece garlic clove minced
- 5 g fresh ginger minced
- 100 g canned diced tomatoes
- 100 ml coconut milk
- 1 tablespoon vegetable oil
- 1 tablespoon curry powder
- 0.5 teaspoon ground cumin
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper ground
- 5 g fresh cilantro chopped

- Heat vegetable oil in a medium pan over medium heat.
- Add diced onion and cook until translucent, about 3 minutes.
- Add minced garlic and ginger; cook for 1 minute until fragrant.
- Stir in curry powder and ground cumin; cook for 30 seconds to release aroma.
- Add diced skinless chicken breast; cook until lightly browned, about 5 minutes.
- Add sliced carrot and chopped red bell pepper; stir to combine.
- For in canned diced tomatoes and coconut milk; stir well.
- Season with salt and ground black pepper; bring to a simmer.
- Cover and cook on low heat for 15 minutes until chicken is cooked through and vegetables are tender.
- Remove lid and simmer for 5 minutes to thicken sauce if needed.
- Garnish with chopped fresh cilantro before serving.
