- 180 g sea bass fillet skin on
- 100 g fennel bulb sliced thin
- 1 teaspoon anise seeds crushed
- 15 ml extra virgin olive oil
- 10 ml lemon juice fresh
- 1 piece garlic clove minced
- 1 pinch salt fine
- 1 pinch black pepper ground

Instructions
- Preheat the grill to medium-high heat.
- Rinse the sea bass fillet under cold water and pat dry with paper towels.
- In a small bowl, mix crushed anise seeds, minced garlic, lemon juice, and half of the olive oil.
- Brush the sea bass fillet with the anise and garlic mixture on both sides.
- Season the fillet with a pinch of salt and ground black pepper.
- Place the sliced fennel bulb in a grill-safe pan or foil tray and drizzle with remaining olive oil and a pinch of salt.
- Put the fennel on the grill and cook for 5 minutes until slightly softened.
- Place the sea bass fillet skin side down on the grill.
- Grill the sea bass for about 4-5 minutes on the skin side until crispy and golden.
- Flip the fillet carefully and grill for another 2-3 minutes until the fish is opaque and flakes easily with a fork.
- Remove the sea bass and fennel from the grill.
- Serve the grilled sea bass on a bed of grilled fennel slices, garnished with a lemon wedge if desired.
