  • 50 g cucumber peeled and diced
  • 20 g red onion thinly sliced
  • 15 ml fresh lemon juice
  • 10 ml extra virgin olive oil
  • 5 g fresh parsley chopped
  • 1 pinch sea salt
  • 1 pinch black pepper ground

Instructions

  1. Rinse the sea tomatoes under cold water and pat dry with a paper towel.
  2. Cut the sea tomatoes into bite-sized pieces and place them in a mixing bowl.
  3. Peel and dice the cucumber into small cubes and add to the bowl with sea tomatoes.
  4. Thinly slice the red onion and add it to the bowl.
  5. In a small bowl, whisk together fresh lemon juice and extra virgin olive oil to make the dressing.
  6. For the dressing over the sea tomato mixture and toss gently to combine all ingredients.
