  • 120 g fresh skinless salmon fillet diced
  • 10 ml fresh lemon juice
  • 10 ml fresh orange juice
  • 5 ml extra virgin olive oil
  • 5 g fresh flat leaf parsley chopped
  • 3 g fresh chives chopped
  • 10 g shallot minced
  • 5 g capers chopped
  • 1 pinch sea salt
  • 1 pinch fresh ground black pepper

  1. Place the diced fresh skinless salmon fillet in a mixing bowl.
  2. Add the minced shallot to the bowl with the salmon.
  3. For in the fresh lemon juice and fresh orange juice over the salmon mixture.
  4. Add the extra virgin olive oil to the bowl.
  5. Add the chopped fresh flat leaf parsley and chopped fresh chives to the bowl.
  6. Add the chopped capers to the mixture.
  7. Season with a pinch of sea salt and a pinch of fresh ground black pepper.
  8. Gently mix all ingredients together with a spoon until well combined.
  9. Cover the bowl with plastic wrap and refrigerate for 10 minutes to allow flavors to meld.
  10. Remove from refrigerator and serve immediately on chilled plates or with toasted bread.
