- 70 g dry red lentils
- 15 g fresh cilantro leaves chopped
- 0.5 teaspoon ground cardamom
- 10 ml extra virgin olive oil
- 15 ml fresh lemon juice
- 30 g red bell pepper diced
- 20 g small red onion diced
- 1 piece garlic clove minced
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Rinse the dry red lentils under cold water until water runs clear.
- Place lentils in a pot and cover with 250 ml of water.
- Bring to a boil, then reduce heat and simmer for 15 minutes until lentils are tender but not mushy.
- Drain lentils and set aside to cool.
- In a small bowl, whisk together extra virgin olive oil, fresh lemon juice, ground cardamom, salt, and black pepper to make the dressing.
- Dice the red bell pepper and small red onion finely.
- Mince the garlic clove finely.
- In a large mixing bowl, combine cooled lentils, diced red bell pepper, diced red onion, minced garlic, and chopped fresh cilantro leaves.
- For the dressing over the lentil mixture and toss gently to combine all ingredients evenly.
- Adjust seasoning with additional salt and pepper if needed.
- Serve the salad chilled or at room temperature.
