  • 70 g dry red lentils
  • 15 g fresh cilantro leaves chopped
  • 0.5 teaspoon ground cardamom
  • 10 ml extra virgin olive oil
  • 15 ml fresh lemon juice
  • 30 g red bell pepper diced
  • 20 g small red onion diced
  • 1 piece garlic clove minced
  • 1 pinch salt
  • 1 pinch black pepper ground

Instructions

  1. Rinse the dry red lentils under cold water until water runs clear.
  2. Place lentils in a pot and cover with 250 ml of water.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes until lentils are tender but not mushy.
  4. Drain lentils and set aside to cool.
  5. In a small bowl, whisk together extra virgin olive oil, fresh lemon juice, ground cardamom, salt, and black pepper to make the dressing.
  6. Dice the red bell pepper and small red onion finely.
  7. Mince the garlic clove finely.
  8. In a large mixing bowl, combine cooled lentils, diced red bell pepper, diced red onion, minced garlic, and chopped fresh cilantro leaves.
  9. For the dressing over the lentil mixture and toss gently to combine all ingredients evenly.
  10. Adjust seasoning with additional salt and pepper if needed.
  11. Serve the salad chilled or at room temperature.
