  • 50 g curly kale leaves chopped
  • 30 g carrot shredded
  • 30 g red bell pepper diced
  • 15 ml lemon juice fresh
  • 10 ml extra virgin olive oil
  • 5 ml honey pure
  • 1 piece garlic clove minced
  • 1 pinch salt fine
  • 1 pinch black pepper ground
  • 15 g toasted sliced almonds

  1. Wash the curly kale leaves thoroughly under cold running water.
  2. Remove the thick stems from the kale leaves and chop the leaves into bite-sized pieces.
  3. Peel and shred the carrot using a grater or shredder.
  4. Dice the red bell pepper into small pieces.
  5. In a small bowl, combine fresh lemon juice, extra virgin olive oil, pure honey, and minced garlic clove.
  6. Whisk the lemon juice mixture well until fully emulsified.
  7. Place the chopped kale, shredded carrot, and diced red bell pepper in a large mixing bowl.
  8. For the lemon vinaigrette over the vegetables.
  9. Add a pinch of fine salt and ground black pepper to the salad.
  10. Massage the kale gently with your hands for about 2 minutes to soften the leaves and evenly distribute the dressing.
  11. Sprinkle toasted sliced almonds on top of the salad for crunch.
