- 150 g apple peeled and chopped
- 20 g granulated sugar
- 30 ml water
- 1 piece egg white large
- 15 g granulated sugar for meringue
- 5 ml lemon juice fresh
- 1 pinch pinch cream of tartar

Instructions
- Place chopped apples, 20 g sugar, and 30 ml water in a small saucepan.
- Cook over medium heat, stirring occasionally, until apples are soft and break down into a compote, about 10 minutes.
- Remove compote from heat and stir in 5 ml fresh lemon juice. Let cool slightly.
- Preheat oven to 150 C (300 F).
- In a clean bowl, beat 1 egg white with 1 pinch cream of tartar until foamy.
- Gradually add 15 g sugar for meringue while continuing to beat until stiff, glossy peaks form.
- Spoon the apple compote into a small ovenproof dish.
- Carefully spread the meringue over the compote, sealing edges to prevent shrinking.
- Bake in preheated oven for 15 minutes or until meringue is lightly golden.
- Remove from oven and let cool for 5 minutes before serving.
