  • 120 g white beans canned drained and rinsed
  • 200 ml chicken broth low sodium
  • 50 g onion diced
  • 1 piece garlic clove minced
  • 30 g green chili pepper diced mild
  • 1 teaspoon ground cumin
  • 0.5 teaspoon dried oregano
  • 1 tablespoon olive oil extra virgin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper ground
  • 5 g fresh cilantro chopped
  • 10 ml lime juice fresh

  1. Heat olive oil in a medium pot over medium heat.
  2. Add diced onion and cook until translucent, about 3 minutes.
  3. Add minced garlic and diced green chili pepper; cook for 1 minute until fragrant.
  4. Add diced skinless chicken breast to the pot and cook until no longer pink, about 5 minutes.
  5. Stir in ground cumin and dried oregano; cook for 30 seconds to release aroma.
  6. Add drained and rinsed white beans and chicken broth to the pot; stir to combine.
  7. Bring the chili to a simmer, reduce heat to low, cover, and cook for 20 minutes.
  8. Season with salt and ground black pepper; stir well.
  9. Remove from heat and stir in fresh chopped cilantro and fresh lime juice.
