- 250 ml whole milk
- 30 g granulated white sugar
- 20 g cornstarch
- 1 piece large egg yolk
- 15 g unsalted butter
- 1 teaspoon vanilla extract

- In a medium saucepan, combine 200 ml whole milk and granulated white sugar over medium heat.
- In a separate bowl, whisk together cornstarch and remaining 50 ml whole milk until smooth with no lumps.
- Slowly For the cornstarch mixture into the warm milk and sugar in the saucepan, whisking constantly.
- Cook the mixture over medium heat, stirring continuously until it thickens and starts to bubble, about 5 minutes.
- In a small bowl, lightly beat the large egg yolk.
- Temper the egg yolk by slowly adding a few tablespoons of the hot pudding mixture into the yolk while whisking.
- For the tempered egg yolk back into the saucepan and cook for 2 more minutes, stirring constantly.
- Remove the saucepan from heat and stir in unsalted butter and vanilla extract until fully combined and smooth.
- For the pudding into a serving dish or individual cups.
- Cover the surface with plastic wrap to prevent a skin from forming and refrigerate for at least 2 hours before serving.
