  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. Grease a small muffin tin or line with paper cupcake liners.
  3. In a mixing bowl, cream the softened unsalted butter and granulated sugar until light and fluffy.
  4. Add the large egg and vanilla extract to the butter mixture and beat well until combined.
  5. In a separate bowl, whisk together the all purpose flour, almond flour, baking powder, and salt.
