- 50 g dark chocolate 70% cocoa
- 30 g unsalted butter
- 40 g chestnut puree unsweetened
- 25 g granulated sugar
- 1 piece large egg
- 15 g all purpose flour
- 0.5 teaspoon vanilla extract pure
- 1 pinch pinch salt

- Preheat oven to 200 degrees Celsius (about 390 degrees Fahrenheit).
- Grease a small ramekin with unsalted butter and lightly dust with flour, tapping out excess.
- Chop dark chocolate into small pieces for easier melting.
- In a heatproof bowl, melt dark chocolate and unsalted butter together over a pot of simmering water, stirring until smooth.
- Remove melted chocolate mixture from heat and stir in chestnut puree until fully combined.
- In a separate bowl, whisk large egg, granulated sugar, vanilla extract, and pinch of salt until pale and slightly thickened.
- Gently fold the melted chocolate mixture into the egg mixture.
- Sift all purpose flour over the mixture and fold carefully until just combined, avoiding overmixing.
- For batter into the prepared ramekin, filling about 3/4 full.
- Place ramekin on a baking sheet and bake in preheated oven for 10 to 12 minutes until edges are set but center is still soft.
- Remove from oven and let rest for 2 minutes before carefully inverting onto a plate.
- Serve immediately for molten center experience.
