  • 100 g all-purpose flour
  • 50 g unsalted butter chilled diced
  • 30 g granulated sugar
  • 15 ml cold water
  • 80 g fresh ripe figs quartered
  • 1 piece egg white large
  • 40 g granulated sugar for meringue
  • 1 teaspoon lemon juice fresh
  • 0.5 teaspoon vanilla extract pure

  1. Preheat oven to 180 degrees Celsius (350 Fahrenheit).
  2. In a bowl, combine all-purpose flour and granulated sugar for crust.
  3. Add chilled diced unsalted butter to flour mixture and rub with fingers until mixture resembles coarse crumbs.
  4. Add cold water gradually and mix until dough forms a ball.
  5. Wrap dough in plastic wrap and refrigerate for 30 minutes.
  6. Roll out chilled dough on a floured surface to fit a 15 cm tart pan.
  7. Press dough into tart pan and trim excess edges.
  8. Prick base of dough with fork to prevent bubbling.
  9. Bake tart shell in preheated oven for 15 minutes until lightly golden.
  10. Remove tart shell from oven and let cool.
  11. Wash and quarter fresh ripe figs.
  12. In a clean bowl, beat egg white with lemon juice until soft peaks form.
  13. Gradually add granulated sugar for meringue while beating until stiff glossy peaks form.
  14. Add vanilla extract and gently fold into meringue.
  15. Arrange quartered figs evenly over cooled tart shell.
  16. Spread meringue over figs, creating peaks with the back of a spoon.
  17. Bake tart in oven for 10-12 minutes until meringue is lightly golden.
  18. Remove tart from oven and let cool before serving.

  • Do not overbeat the egg whites to avoid dry meringue.
