  • 150 g medium shrimp peeled and deveined
  • 100 g silky tofu cubed
  • 300 ml chicken broth low sodium
  • 10 g fresh ginger peeled and sliced
  • 1 piece garlic clove minced
  • 15 g green onion chopped
  • 1 tablespoon soy sauce low sodium
  • 1 teaspoon sesame oil
  • 1 pinch white pepper ground

Instructions

  1. Peel and devein the medium shrimp if not already done.
  2. Cube the silky tofu into bite-sized pieces carefully to avoid breaking.
  3. Peel and slice fresh ginger thinly.
  4. Mince one garlic clove finely.
  5. Chop green onion into small pieces, separating white and green parts.
  6. In a medium pot, heat sesame oil over medium heat.
  7. Add minced garlic and sliced ginger to the pot and saute for 1 minute until fragrant.
  8. For in 300 ml of low sodium chicken broth and bring to a gentle boil.
  9. Add the peeled shrimp to the boiling broth and cook for 2 minutes until they turn pink.
  10. Gently add the cubed silky tofu to the pot and simmer for another 2 minutes without stirring too much.
  11. Add 1 tablespoon of low sodium soy sauce and a pinch of ground white pepper to the soup and stir gently.
  12. Add the chopped white parts of the green onion and cook for 1 minute.
  13. Turn off heat and garnish the soup with the green parts of the chopped green onion.
  14. Serve the soup hot in a bowl and enjoy.
